Salad with tempeh and apples

Tempeh 90 120
Broccoli 150 200
Cleaned scorzonera 120 160
Cauliflower 130 160

Extra virgin olive oil 1 tbsp 1.5 tbsp
Soy sauce 1 tbsp 1 tbsp


  • Sauté the tempeh with oil in a non-stick frying pan.
  • Mix over high heat for a few minutes, adding a little water until the bottom of the pan is covered. Cover with a lid and cook for 30 minutes over medium heat.
  • Add the soy sauce and cook for 5 minutes more. Remove the lid and let any excess liquid boil away.
  • Cut the carrots into strips and cook them in boiling water. Drain them without discarding the water, which you must use to cook the broccoli. When cooked, remove the broccoli from the water and use the water to cook the cauliflower.  
  • Drain the cauliflower and add all the vegetables to the tempeh.
  • Peel the apple, dice it and add it to the salad.
  • Mix and serve.
