Savoury pancakes with ham and sun-dried tomatoes
INGREDIENTS (for 4 pancakes)
- 8 tablespoons of EnerZona Pancakes mix (80g)
- 120g of fresh whole milk
- 60g of fat-free cooked ham
- 50g of dried cherry tomatoes
- 6 sliced almonds
PREPARATION
In a bowl, place the pancake mix and milk, stirring well with a whisk until the mixture is thick and lump-free.
Heat a pancake pan (or non-stick skillet) over low heat. Pour in a small scoop of mixture and cook over very low heat for about 2 minutes until small bubbles appear on the surface. Flip with a spatula, then cook for another minute. Stack the pancakes on a serving plate when they are finished cooking.
Serve with cooked ham and sun-dried tomatoes. Garnish with the almonds.
Enjoy warm, for a great lunch in perfectly balanced style.
Recipe for 6 complete blocks, 2 servings of 3 blocks each.
