Pear and Grana Padano cheese carpaccio with soy balsamic vinegar

San Martino pears 300 g 400 g
Grana Padano flakes 60 g 80 g
Chives 7-9 10-12
Soy sauce 1.5 tbsp 2 tbsp
Balsamic vinegar 2 tsp 1.5 tsp
Extra virgin olive oil 1/2 tbsp 1 tbsp
Salt and pepper as needed as needed
Chervil as needed as needed


  • Wash the pears without peeling them. Cut them in half, remove the seeds and slice finely.
  • Prepare the dressing in a small bowl: mix the oil, soy sauce, balsamic vinegar together, emulsify well and add a little salt.
  • Finely cut the chives.
  • Arrange the pears carpaccio-style on a flat plate, pour the dressing over them, add the cheese flakes and chives and garnish with a few sprigs of chervil.
