Parma style aubergines

Large aubergine 350 g 350 g
Grated parmesan cheese 20 g 20 g
Cows’ milk mozzarella 70 g 105 g
Tomato passata as needed as needed
Basil leaves as needed as needed
Extra virgin olive oil 1 tsp 2 tsp


  • Slice the aubergine and cook it in the microwave oven.
  •  Lay out the slices in an oven pan, add salt. Cover with a layer of Parmesan cheese, a layer of thin slices of mozzarella, tomato passata and basil. Repeat the process.
  • The last layer should be a layer of aubergines with a drizzle of oil and salt.
  • Cook in the oven for about 30 minutes.
